Ingredients

675g Scottish rolled organic oats
100g dark brown sugar
450g unsalted butter
100g Scottish runny honey
100g golden syrup
250g mixed dry prunes, dried berries, apricots and pumpkin seeds

Method

1 Pre-heat your oven to 160°C or Gas Mark 4.
2 In a large pan, melt the sugar and butter. Once fully melted, add in the syrup and honey.
3 Next, pour in the oats and the mixed fruits and nuts. Stir until combined and the fruits and nuts are well distributed throughout the mixture. 
4 Transfer into a 1 kilo, large, flat and lined baking tray. Bake in the pre-heated oven for 20 to 25 minutes 
5 Remove from the oven, score into nice sized chunks and allow to cool. Once cooled, split into whatever size pieces you like and enjoy!
