Vegan chickpea loaf with roasted vegetable salad by One One Two on the Brae

Ingredients: Serves 4
For the loaf:
1 carrot, diced
1 red onion, diced
2 garlic cloves, crushed
1 red pepper, diced
800g tinned cooked chickpeas
1 tbsp. ground turmeric
1 tbsp. ground coriander
2 tbsp. ground cumin
2 tbsp. smoked paprika
½ tsp chilli powder
250g chickpea flour
4 tbsp. tahini
1 lemon, juice of
Sea salt
For the pepper coulis:
3 red peppers
Pinch of chilli powder
1 garlic clove
200ml olive oil
Smoked paprika
1 lemon, juice of
Method
For the veggie chickpea loaf:
1 Preheat oven to 180°C.
2 Start by sweating down the carrot, onion, red pepper and garlic for around 10 minutes then side aside to cool.
3 Drain the chickpeas, rinse in cold water and leave to drain.
4 Once cooled, add half of the cooked vegetables to a food processor with the chickpeas and blitz until combined. Add the spices and tahini and blend until a paste is formed.
5 Remove from the food processor. In a large mixing bowl, add the blended mix, the lemon juice, and the remaining cooked vegetables. Season with a good pinch of sea salt.
6 Sift the chickpea flour into the mix and fold this all together. You can add a little more flour if it is a little wet.
7 Transfer into a lined loaf tin and bake for around 40 minutes. Allow to cool slightly before turning out.
For the pepper coulis:
1 Coat the peppers and garlic with a little olive oil and roast at 200°C for 20 minutes, until charred on the outside.
2 Whilst still warm, deseed and skin the peppers, then transfer to a food processor with the garlic and blend till smooth.
3 Add the lemon juice, smoked paprika and chilli powder and blitz, then slowly add the olive oil until emulsified.
4 Season with sea salt.
To serve
1 Slice the veggie loaf to your desired thickness, serve with a salad of roast veggies and rocket, and a good drizzle of the pepper coulis!
