Inspired by the beautiful lush grounds and gardens of nearby Culzean Castle, The Botanic Garden cocktail is the perfect refreshing drink to start the summer in Ayrshire with. Key to this drink is the Botanist Gin from nearby Islay, which is distinctive for its augmentation of the nine classical gin aromatics with a further 22 locally picked wild Islay botanicals.

What you will need:

50ml Botantist Gin

25ml Lemon Juice

5ml Elderflower Cordial

2 Sprig Rosemary

1 Cucumber peel

2 Sprig Thyme

4 Basil Leafs

Ice cubes

Crushed Ice

Method:

Place two slices of cucumber, one sprig of rosemary, one sprig of thyme and four basil leaves into a Boston tin and muddle into the base of the tin.

Add the ice, then add 50ml of The Botanist Gin, 25ml of Lemon juice, 25ml Sugar syrup  and 7.5ml of Elderflower cordial. 

Shake ingredients well then pour over crushed ice into a large wine glass.

Garnish with cucumber peel, a rosemary sprig and a sprig of thyme, churn garnishes through the drink and serve with a straw.
